Super Spectacular Really Good Yummy Pancakes

Today’s Happy Note: Spending time with my wonderful cousin before she moves to San Francisco.

Today felt both really busy and really lazy, at the same time.  Do you ever have days like that?  Sort of an odd feeling, I guess, but also kind of pleasant, because I wind up feeling both energized and relaxed.  I spent the morning making (and consuming) awesome pancakes,  the afternoon teaching a band of very sweet high schoolers, late afternoon with my cousin and her husband and then LSAT studying (mostly the dreaded logic games), and the evening working out.  I squeezed some grocery store shopping and tv watching in there and that was my day!

I like to procrastinate my schoolwork until Sundays. 🙂

Let’s start with the pancakes!

I made these up on the spot and they turned out splendiferous.  They were soft on the inside (that “ohmygoshthisissopillowy soft” not that “thisissosoftitmustberaw soft”) but crisp on the outside.  Thick, with plenty of volume.  And made with totally wholesome ingredients, and not a lot of added sugar at all.  Basically, these are love, in protein pancake form (I am only calling them “protein pancakes” because the “base” is mostly protein-y and not carby — they are not some weird health food or anything, I promise!)

I was stupid and didn’t measure things out precisely or write the measurements down but this is roughly what it was:

1/4 C peanut flour (yes, I know this is a blog “fad” but it is an awesome fad that I actually like)

2 Tbsp oats

1 scoop vanilla hemp/whey protein powder (half serving)

1/2 Tsp baking powder

1/2 Tsp cinnamon

2 Tbsp flax meal

1 whole egg

1/4 C pumpkin

Water (as needed) to thin out

Earth Balance or butter, to coat the pan with

Combine all dry ingredients, then add in wet ingredients until pancake-consistency is achieved (I know, I am really scientific).  Heat the butter in the pan (you don’t need more than a teaspoon, at most) and when it starts to pop, dollop on your batter.  I made three generous ‘cakes.

Top with more butter, real maple syrup, and fruit or nuts of choice.  I used sesame almonds!

Don’t let this up close picture fool you.  These pancakes are generous.  Also, far more nuts than that were involved. 🙂

This morning meal made my day.  Bonus: it kept me full for five hours of teaching bleary-eyed high school seniors. I needed a meal with some serious stamina and this was it!  I have not made a “real” weekend breakfast in a long time. I forgot how much fun it is.  It’s nice not to have oats or yogurt or a smoothie for once!  Mmmmm.  Now I just need some bacon and we’ll be all set…

I got home from my afternoon shenanigans around 6:00.  I was technically supposed to run 8-10 miles, since I had skipped out on yesterday’s run, and tomorrow’s run isn’t going to be very long (10-12 miles).  But I just was not feeling it.  I don’t think it was a matter of laziness, either.  It was a matter of “I need to have some oatmeal with nut butter and lie on my bed and read blogs and snuggle up in my fleece blanket right now“, in all actuality.  And so that’s exactly what I did.

I find it sort of odd that oats with nut butter and melted dark chocolate and maple syrup are my comfort food.  But hey, there are worse things.  These are all whole foods.  Delicious whole foods.

BUT after a few hours of winding down, which my brain/body needed, I felt ready for a workout.  Normally, I am an all-or-nothing girl and I either feel like I have to “waste” my day by eating poorly and not working out or have a hardcore workout and eating perfectly.  Silly, right?  By this point, I genuinely wanted to run, but was feeling anxious about it, because of said all-or-nothing mindset. I felt like, “how can I go run now if I have been lazy all evening?  Aren’t the two mutually exclusive???”  Um, no.  Duh, Caronae.

I ended up having a lovely workout!  I lifted (arms and abs) for about 30 minutes then ran a slow, easy five miles, which was exactly what my body needed.  Sometimes I just need my brain to shut-up so that I can listen to my body. 🙂

All in all, a lovely Saturday.

And I’m looking forward to making tomorrow a lovely Sunday.  And then having a lovely week.

Yogunancing and Stuffed Quesadillas

Today’s Happy Note: Running in the rain!  Dancing in the rain!  Thinking in the rain!

I had an awesome yogunancing workout today.  Yogunancing=yoga, running, dancing.  It ended up being an epic 6 hour adventure because I kept getting caught in the rain and waiting and then having to take the train and then waiting some more.  It was quite fun actually.  The adventure included a 90-minute vinyasa yoga class followed by a 9-ish mile run and a 30-minute dance/gymnastics sesh in the park.  I actually just remembered during my run/dance sesh that, two summers ago, I did adult gymnastics classes at Chelsea Piers. I am signing up again!  FYI to new readers (feel free to say hi!): I was a gymnast from when I was 4 until I was 14.  I sometimes miss it.  Tumbling is pure joy.  I’m starting this week and I’ll let you know how the classes go!  I need to find an outfit first though…

Other than that adventure, my day involved some food experimentation, some Real Housewives watching (why why why are they so mean to each other), reading, writing, and, currently, some Nat Geo Great White Shark show viewing.

Breakfast fail:

It actually was not a taste failure.  But please note that these were supposed to be pancakes.  Ummm, yeah.  That didn’t happen.  But it’s entirely my fault because I just threw tons of stuff into a bowl and hoped they would magically turn into pancakes.  The taste was spot on though!  Berries, flax meal, blueberry yogurt, pb.  So I would call them yummy piles of mush rather than pancakes.  But at least I tried!  It is Pancake Sunday after all.

Okay.  Dinner.  This was one of the easiest, yummiest dinners I’ve ever had.  Ten minutes from fridge to plate and bursting with nutrition and flavor.  I used  a TJ’s habanero lime tortilla (after seeing them at Gabriela’s blog!) to make a quesadilla of sorts.  I stuffed it with a serving of low fat refried pinto beans, gouda cheese, and TJ’s cilantro jalapeno hummus.  I can see myself eating this dinner every day for like…all of summer.

I slathered some guacamole on top and had carrots, cucumbers, red pepper, and pineapple on the side.  So gooey.  So warm.  So many flavors — spicy, dense, creamy, cheesy.

Eat this combo.  Now.

I had to follow it up with something else that felt tropical-ish.  Which meant coconut.

Round one: warm brownie topped with WF coconut dark chocolate, snowy shredded coconut, and a few chocolate-covered pretzels.

Round two: mixed a tbsp of crunchy pb, a few tbsps shredded coconut, and a splash of soy milk.  This made a delicious dip for more chocolate covered pretzels!

This was an awesome dessert dip.

It’s been such a busy weekend!  Time for me to wind down for the work week.  Lots to do tomorrow and all week, really.  Stay tuned for recaps of my gymnastics classes and a super awesome Adventure next Saturday!

Cookies, more skiing, and friends!

Today’s Positive Note: I have really strong legs, arms, and abs, and this makes me pretty good at cross-country skiing.  I am also brave and not afraid to go down hills.  I think my “running muscles” help  a lot with skiing.  I actually like all winter sports, and would love to downhill ski more often, but I do not live near mountains.

Camera mission accomplished!  I got a wonderful new camera today at Best Buy.  This is actually my first ever digital camera, so I am super excited.  I’ll probably be posting lots of random pictures today.  However, I accidentally fell on top of my computer yesterday (I am a klutz who can fall onto anything), and the hinge, which was already breaking, is now fully broken.  I took it to Geek Squad and they said I need to back up my hard drive, give it to them tomorrow, and they’ll send it out, and it will come back in two to three weeks.  Gah!  What will I do without my computer for that long?!?!?  Thankfully, my school has good computer labs, and I will be able to email, blog, and do my schoolwork.  But still, I like having my computer in my room.

Yesterday, my sister, my cousin, and I made chocolate chip/peanut/cinnamon cookies from this Martha Stewart cookie book.  They tasted a little bland/dry for some reason…We also watched Up, which is my favorite animated movie ever.  It is adorable and quite touching, actually.  Today I had pancakes with peaches, yogurt, and flax for breakfast.  It fueled me through another great afternoon skiing adventure!  When I got back I had hot chocolate.  I LOVE hot chocolate.  It’s by far my favorite drink (I even drink it in the summer time too).  I usually use nestle packets or Land O Lakes flavored packets, but I almost always stir in pieces of dark chocolate or chocolate chips.  It makes a little melty surprise of chocolatey goodness at the bottom.  Awesome.  What’s your favorite seasonal food or drink?

I spent the evening with one of my best friends from high school.  We went to a meeting for the local college writing club.  I was really involved in writing groups in high school, and the same people are in the college group now.  I really miss the people, but I also miss the open, calm, stimulating atmosphere that writing groups gave me.  I loved workshopping pieces and performing them.  I even got to travel to New York and California for poetry competitions.  Those events form some of my happiest high school memories.  What childhood memories do you happily recall?  I have several others, including swimming across a three mile lake at my favorite summer camp when I was about 11 (I was a swimmer then, don’t worry), making elaborate gingerbread houses with my mom on snow days, and setting the toaster on fire with my sister when I was about 7.
